Summer Lime and Ginger Detox Soup

A deliciously fresh lime and spicy ginger summer, soup to help you detox and lose weight. So light and so full of flavor. You can really taste how healthy it is.


Ingredients:


  • 1 tablespoon, olive oil
  • 1 medium white onion, sliced
  • 2 large garlic cloves, minced
  • 1 tablespoon, fresh ginger, peeled & grated
  • 1 red bell pepper, sliced lengthwise
  • 3-4 crimini mushrooms, sliced
  • 6 cups, vegetable broth
  • 1 cup, water
  • ½ cup, organic brown rice
  • 1 cup, broccoli florets
  • ½ lemon, juiced
  • 1 teaspoon, cayenne
  • salt and pepper, to taste


Instructions:


  1. Heat olive oil in a large pot over medium-low heat
  2. Add onion, ginger and garlic and cook for 3-4 minutes - until translucent
  3. Add in red bell pepper, cayenne, salt and pepper and saute for another minute
  4. Pour in the vegetable broth, water and brown rice
  5. Bring to a boil. Reduce heat and simmer for 35 minutes
  6. Add broccoli florets and crimini mushrooms and let cook for 5 minutes
  7. Pour in the lemon juice and adjust seasoning if needed
  8. Garnish with lemon slices
